About 5 Ply Cookware
Suitable for all cooktop surfaces, the 430 stainless steel heating surface construction enables usage of this pan even on induction cooktops. The 5 layer construction provides more even heat distribution and retention across the entire surface, which reduces surface hot spots to deliver more even browning across your dish.  The 304 stainless steel food surface is a durable and stain resistant surface that doesn't have the health negatives associated with fluoronated non-stick surface treatments.

Early review

Just arrived - will update when used thoroughly.

First impressions - not quite as heavy or thick as I expected for 5 ply. Only 3.1 lbs which is lighter than other 5 ply competitors like Misen, but heavier than All-Clad D3 (2.8 lbs). This is due in part to the thickness of the walls which I measure at 2.65 mm using calipers. This is a touch thicker than All-Clad D3 (2.5 mm) and thinner than Misen (3.0 mm). The handle feels comfortable to hold but it's pretty rounded. I wish it was a little wider and flatter, which would make it less likely to tip side to side when full of food. It's a good quality pan but the fit and finish are not quite on par with my other multi-ply cookware like cuisinart and even cooks standard, both of which are thicker (~2.85 mm) and have a more polished look to them.

As promised in the description, the actual cooking surface is 10.5" wide - thank you brandless for providing this measure, most others don't. The internal diameter at the top is 11.75" and the external diameter at the lip is 12.25" for those looking for a lid that fits. This means the walls are more vertical than other pans, making it more of a shallow saute pan than a skillet. I bought this pan with that in mind - I wanted to maximise surface area for searing larger cuts of meat, and this pan offers the best surface area to total width ratio that I've seen in a skillet. For those that want to flip food, it may not perform as well as others. It's certainly light enough to be maneuverable, unlike a 12" cast iron skillet.

I heated it on my induction cooker at medium (900 W). After 3-4 minutes, the middle of the cooking surface was at 290 F and the edges were around 220-250 F, while the walls were also 200-215 F. Part of this is due to the smaller size of the induction coil than the surface area, but it shows some imbalance in heat distribution. A longer warming period might even this out more. I don't have a similar size multi-ply pan to compare it to, but virtually all burners are narrower than this pan, and the aluminum core is there to help offset this imbalance.

Will update this (or add another review) when I've had a better chance to use it and compare it to other pans.

Heavy pans

These pans (I got several sizes/types) seem to be great quality. Very heavy, which is good for cooking, though it makes them difficult to handle. I do wish the frying pans included lids, or that the saucepan lids fit the frying pans.

Great stainless steel sauté pan at an unbeatable price

A large cooking surface with excellent even heat distribution and easy cleanup. For me this is as good as any top shelf brand pan at three times the price. What more can I say? Oh yeah, did I mention the truly bargain price? Bonus!

I love everything about this pan except that it doesn't come with a lid! Looks great, cooks nicely.
